Everyone loves interactivity at the bar. And most of us are endlessly amused with bar toys as they are so much more fun than anything we grew up with. That is why the relatively new bar cart at the Fifth Floor in the Palomar hotel is so much fun. Veteran mixologist Jacques Bezuidenhout ,(try to say that five times fast), is at the helm and can custom-make classics like Negronis, which he is serving in elegant coups.
You can see the back side of the bar cart, which used to be a cheese cart, as it is wheeled to the table. Bartenders do tableside preparation in both the bar and the dining room. One of the other fun toys at the bar is the Macallan ice bar machine, which transforms a square hunk of ice into a ball right before you eyes. They primarily use it in Macallan drinks, but it would be a solid and elegant base for many other cocktails.
The restaurant’s crudo, with coriander and Buddha’s hand, is divine. It has the kick and spice of a ceviche. The sake marinated duck, while not low cal, is also delicious. I don’t know that I would pair either with a cocktail but you could challenge Jacques to try.
