Some people hit up the farmers’ market exclusively for produce, while others love the prepared foods that make sack lunches a breeze. Most seafood vendors offer a plethora of fish, but if you’re looking to cook yourself, Carlsbad only offers seasonal shellfish by the bag. The real reason everyone is lining up is for the oysters. Nestled in a huge bed of ice, the expert vendors offer at least two varieties each week. Not only can you pick your own, but you can watch as they shuck oysters with ease. If you’ve ever shucked an oyster, you know it’s hard work, but these guys make it look as easy as slurping them down.
Lunas and blondes are the staples here, because everything is from just down the road in Carlsbad. The vendors are happy to recommend a variety based on your tastes. In the late summer, they’ll sometimes offer up giant oysters–which are surprisingly sweet–for three dollars, but the standard is two dollars per oyster, or ten for a bag of a dozen you shuck yourself. Once you’ve got your plate, mosey on over to the standing room only table. Lemons, cocktail sauce, and even ponzu line the table so you can decorate oysters to your specifications.
