Lets face it, as a mom of young children, cooking dinner can prove to be very trying. This recipe is quite simple, has a fantastic taste, and is easy on the budget. This is what you need:
1 Crock Pot
3/4 lb boneless leg of lamb, trimmed of all visible fat and cut into 1″ cubes (can buy already prepared from butcher’s counter)
10-12 red potatoes sliced
6 cups water
2 boxes of chicken broth
1 bag of sliced carrots or 3 med carrots sliced
3 med parsnips sliced
1/2 head of cabbage shredded
1 lg onion sliced
1 bay leaf
A pinch of dried thyme
A pinch of salt
1/4 cup chopped fresh parsley or 3 pinches dried parsley
Place all ingredients into crock pot and let simmer on high for four hours or medium for six hours. Serve and enjoy!
