Elizabeth Suh is a full-time, self-employed violin instructor. With a two-year-old little girl running around and her husband, Daniel, serving as a youth pastor while working on a degree, Elizabeth needs family meals that are quick and easy to make and keep their budget intact. This throw-it-together hearty meal is one of the Suh family favorites.
- 1 can Chili beans
- 1 can Black beans
- 1 can Pinto beans
- 1 can Corn
- 1 can stewed tomatoes
- 1 can Mexican stewed tomatoes
- 1 package Ranch seasoning
- 1 package Taco seasoning
Simply mix all ingredients together in a large pot (do not drain any of the cans; mix all in.) Simmer for around 30 minutes.
To make a more hearty soup, add meat such as hamburger or sausage.
It makes about 12 cups of soup and costs $6 to $8 (without meat).
